Canh—Vietnamese Soup with Chicken Meatballs

Canh is a light, tasty and nutritious Vietnamese soup using stock or water as a base with the addition
of seasonal Asian vegetables. This recipe uses garland chrysanthemum, or as it is known in Vietnamese, Tang O.
It adds a distinctive peppery yet fresh flavour to the soup. Tang O can be found in Asian grocery stores but may
easily be substituted with other seasonal greens and vegetables such as mustard greens, watercress or choy sum.
It is important not to overcook the greens, to retain their nutritional value and freshness.
