Indian Sesame Brittle; Til Chikki

According to Ayurveda—the traditional holistic Hindu system of medicine—antioxidant-rich sesame seeds are packed with health benefits and should be consumed in winter. Til (sesame) also has great religious significance in India and is often used in religious ceremonies. It is no wonder this “superfood” is found in so many recipes. These chikkis (brittles) are loaded with warmth and
good fats from the ghee, said to help shield your body against winter colds. It does not hurt that this medicine tastes so delicious, too. All that said, these are a treat in any season, warm or cold. Feel free to add a little twist by incorporating peanuts or cashews to the mix.

Ingredients
365 grams palm sugar, roughly chopped
100 grams ghee or butter
120 grams white sesame seeds
25 grams black sesame seeds
½ teaspoon ground cardamom
1 teaspoon sea salt flakes
Method
  1. Preheat oven to 180C. Grease and line a 20 centimetre x 30 centimetre rimmed baking tray with baking paper.
  2. Place palm sugar in mixing bowl and grate 8 seconds/speed 8.
  3. Add the ghee (or butter) and cook 10 minutes/Varoma/speed 2 without measuring cup, stopping mid-way to scrape down sides of mixing bowl. Add the remaining ingredients and mix 15 seconds/Reverse/speed 3.
  4. Pour the mixture into the lined baking tray and spread evenly using a wet spatula.
  5. Bake for 15–20 minutes (180C) to a deep golden-brown caramel. Gently tap the tray on a bench to get rid of any air bubbles on the surface.
  6. Allow to cool before taking out of the tray and cutting into pieces.
